I make this dish quite often and agree with all of the benefits stated about taboulleh (not sure how to spell it). I add about 1 teaspoon each of salt, pepper and sumac to the recipe but I only add dressing to the portion I am going to eat. The olive oil will absorb into the bulgar wheat when left overnight in the refrigerator therefor leaving the salad tasting a lot drier than when the dressing was first added. I think the lemon juice and extra virgin olive oil will be just fine for a few days left out of the fridge in a covered container. If you decide to add the dressing my way, don't forget to shake it well as you add. You can find #1 bulgar wheat, a.k.a. cracked wheat, in import stores also. I can find it here in lower Michigan for about 89 cents per pound. P.S. I start eating the moment I combine the ingredients.
